Eleven o’clock at night. The dance floor is hot, the bar is bustling, and everyone gets hungry at the same time. That’s our moment. We pull up, the truck opens, and within five minutes, everyone at your party has a hot spring roll in their hand—no plates, no cutlery, and without interrupting the party.

There’s one thing your guests will still remember the next morning, and it’s usually not the appetizer. It’s that warm spring roll at 11 a.m., just when they thought they had to head home.

We know exactly how that moment works, because every year we cater school galas, graduation parties, and—just recently—a business kickboxing gala. A room full of people who all get hungry at the same time after the official part is over—we’re ready, the line keeps moving, and no one has to wait.

What comes out of the pan is handmade. Spring rolls rolled by hand according to Mom’s recipe, in chicken, vegetarian, and halal varieties, accompanied by a wide selection of Vietnamese snacks. And the sauce—sweet or spicy, our own recipe—is the reason people come back for seconds.

No plates, no cutlery, no interruptions. Anyone who wants to dance just keeps dancing with a spring roll in hand.

At a wedding, we do the same thing, but more discreetly. We set up without anyone noticing, keep things low-key, and are gone before the last guest leaves. No power at the venue? We bring a generator. And because we have trucks and carts in various sizes, we can accommodate even a hall or wedding venue with limited space.

Bay and Le Luu started in Apeldoorn in 1983 with a single recipe; now there are multiple trucks on the road and kiosks throughout the eastern Netherlands. We go everywhere, even late at night.
