Chef Erik at 't Ganzenest brings classic French cuisine to life, with attention to quality and simplicity. Love of wine
"I love wine and regularly go on wine trips for the finest gems. Our wine selection is therefore also huge. We now have 1,200 different wines. Of course also from the new world, but mainly old-world wines. Lovers of wines from Burgundy will be in their element here. We have accessible wines and very exclusive ones. You can make it as crazy as you want... We are happy to advise you!"
After completing his chef training, Erik Tas (1984) worked for Erik van Loo for 9 years. First at Zwetheul in Delft and then at the two-Michelin-starred restaurant Parkheuvel in Rotterdam. In 2015, Erik starts his own restaurant Bij Erik which is quickly awarded a BIB Gourmand. The dream for a Michelin star remains and so in 2021 he buys the old 't Ganzenest. After a brief phone call with emotional former owner and chef Harry Visbeen, the name 't Ganzenest was allowed to reappear on the facade. After less than 9 months of opening, Erik Tas already managed to receive his first Michelin star.
