The Patana king or queen moves among the guests in a beautiful traditional leather outfit. We cut the ham from a rolling buffet.
We present the Patanegra according to the Spanish tradition, pure, or in combination with a piece of baguette of which the rim is rubbed with garlic and then rubbed with tomato and dipped in olive oil.
